Yummy New Creation!

What a busy morning already! I could really use a nap too, but that's not going to happen. My five day vaca from work is over. Boo! Gotta make the money for my honey!
Today I am sharing a yummy dish that I made last night. I am definitely surprised at how delicious it was. My hubs couldn't get enough of it. Feast your eyes upon this:

The picture definitely does not do it justice.
 Ingredients:
  • 2 small boneless skinless chicken breasts
  • extra virgin olive oil
  • a couple tomatoes (I used cherry tomatoes since my mom gave me a whole bunch)
  • a quarter of white onion
  • a handful of parsley
  • some homemade salsa  (recipe coming soon for that) or salsa of your choice.
  • Shredded Mozzarella cheese and Sharp.
  • a pack of large flour tortillas
Steps:
  1. Preheat your oven to 350 degrees F.
  2. Brown your chicken in a skillet with just a tad of EVOO. (I like to add a bit of salt and pepper to my chicken, also.)
  3. While your chicken is browning, dice your onion, tomatoes, and parsley.
  4. Put your tortillas on a cookie sheet. (BTW I like to line my cookie sheet with aluminum foil, it saves on clean up.) I put 2 on each. Then spread desired amount of salsa over the tortilla. This will be like your sauce.
  5. Once chicken is fully cooked,  cut it into chunks. Then sprinkle evenly onto tortillas.
  6. Next add the onion, tomato, and parsley.
  7. Then sprinkle your cheese. I like to mix my cheeses.
  8. Then pop into the oven for about 7 minutes, just long enough to brown the tortillas and melt the cheese.
  9. Once done. Cut and serve!
Voila! A yummy meal or appetizer.
Now, I realize my recipe doesn't give a lot of details on ingredient amounts and times, but it is really up to you on how much of each you'd like to use. Plus, I really just use the guess method. Its pretty much trial and error when I cook. haha.

Today is Day 3 of my 365 project.
Remember, this weeks theme is: The Many Faces of Me.
You can find a list of themes and all of my entries here.
Thank you to all of the beauties that are joining in on the fun!
If you would like to join in, please go here and read the rules and join the link party.

Here is my entry for the day.

With this picture I tried to high light my blue eyes and my red lips.
Here is a better picture of the lips:

I love red lipstick. Its so glamorous and sensual and
I believe that every woman should own a red lipstick!

I really hope that everyone has a wonderful day today. I think I am actually looking forward to going to work. I like the adult time. Not that I don't enjoy spending time with my little one, but mama needs a break from ABC songs and the potty training.

Adios mis amigas bonitas!

P.S. Please spread the word about the 365 photo project! And join in if you haven't already!

Thank you Vic! Yeah I definitely need to find some more balms. Lipstick tends to get so dry, but I still love it.

Ladii Aponte, I have a couple ideas for next week but I am having trouble deciding. I should have next weeks theme up by tomorrow. Your skin tone is so pretty. I think you could pull of most colors of lipsticks, but I understand the apprehension because I felt that way when I first started wearing the red lipstick. Then, I found that I love it! haha.
